Ingredients: 5 - 6 lb chicken pieces salt freshly ground pepper 2 1/2 cups basic barbecue sauce Directions: 1. Prepare a fire in a covered charcoal grill. When the coals are hot, push them to the perimeter of the grill's fire pan. Position the oiled grill rack 4 - 6 inches above the fire. 2. Sprinkle the chicken pieces on both sides with salt and pepper. Place them, skin side down, around the edge of the grill rack so they are directly above the hot coals. 3. Grill uncovered, turning frequently for 10 - 15 minutes. Watch the chicken constantly, and have a spray bottle of water handy to douse flare - ups. Move the chicken pieces to the middle of the grilling rack (they may overlap slightly) so that they are no longer directly over the fire. ,br> 4. Cover the grill and open the vents halfway. Cook for 10 minutes. Turn the chicken over, brush it with BBQ sauce, re - cover and cook for 5 minutes. Brush again with BBQ sauce, cover and cook until the chicken is no longer pink when cut at the bone. Pass the remaining BBQ sauce at the table. Serves 6 Bon Appetit! |
